This is a recipe that my mom has always made to accompany our dinners during the colder months. I think that it re-heats well (most of the time) and is just delicious. My husband (who I love to call "picky pants". He says he isn't picky- but he is) will eat it by the truckload.
So, this can easily be made with things that you probably already have. I haven't priced it, but I think that it can be made for under $3.00 total.
Cornbread With Corn Casserole
- 2 eggs, beaten
- 1 (14 ounce) can whole kernel corn, do not drain
- 1 (14 ounce) can cream-style corn
- 1/4 cup margarine, melted
- 1 (8 1/2 ounce) box Jiffy cornbread mix
- Mix first 3 ingredients together (I will sometimes throw in a can of drained and chopped green chilies, finely diced onion, or even 1/2 a cup of shredded cheese. If you wanted to be naughty, chopped cooked bacon would probably be delicious as well).
- Add: margarine and Jiffy corn bread mix, Pour into well greased 8x8 casserole dish.
- Bake for 1 hour at 375 degrees.
